Plenty of people say they dislike coffee when what they really mean is they disliked the coffee they tried — usually something roasted very dark or brewed far too strong. Capsule coffee has the advantage that you can change the strength from a button without changing any equipment, which makes finding your own level much easier.
What actually causes bitterness
Three things drive bitterness, and only one of them is the bean.
- Roast level — darker roasts taste more bitter and less acidic
- Shot size — too long a pour extracts the bitter, astringent compounds. This is the most common cause by far
- Freshness — badly stored capsules lose the aroma that balances the bitterness, leaving only the harsh part
Where to start
| If you | Start with | Why |
|---|---|---|
| Are most afraid of bitterness | Brazil Medium | Medium roast, soft and rounded, no bitter finish |
| Prefer coffee with milk | Signature Blend | Balanced and does not disappear under milk |
| Like aroma over strength | Pangkhon Medium | Expressive aroma without a heavy body |
| Want to try it black but mild | Brazil Medium at lungo size | Diluted and easier, aroma still present |
Full descriptions are in our flavour guide and on the flavours page.
Adjust the button before adding anything
Before reaching for sugar, try these two things.
- Pull a shorter shot — a ristretto tastes stronger but less bitter than a lungo, because it never extracts the harsh tail end. This surprises most people
- Add hot water rather than pulling longer — the same dilution without the over-extracted bitterness
Helpers that are not sugar
- Milk — the fat binds to bitter compounds directly, doing more than sugar does
- A few grains of salt — genuinely reduces perceived bitterness, in quantities too small to taste salty
- Cocoa or chocolate — turn it into a mocha with our mocha recipe
- Cinnamon or vanilla — read as sweetness without any sugar
A two-week progression
- Week one: a medium roast with milk, at espresso size
- Reduce the milk slightly each day
- Once used to it, try one cup black. If it is still too much, go back to milk and try again next week
There is no requirement to drink it black — many people take milk for life and enjoy it perfectly well.
Summary
Start with a medium roast, pull shorter rather than longer, and lean on milk early on. If it still tastes harsh, check your storage with our storage guide and work through our off-taste troubleshooting article.
