Same batch of capsule coffee, same machine, yet today the cup is thin, sour or unusually bitter. Before blaming the capsule, work through these seven causes — most take minutes to fix.
1. The machine is not hot yet
The first cup of the day is usually the weakest because the water and the brew path are still cold, so extraction never gets going. Run one shot of plain water first to bring the machine up to temperature.
2. A cold cup steals the heat
An espresso is a tiny volume of liquid. Pour it into a cold ceramic cup and it drops several degrees instantly, flattening the flavour. Rinse the cup with hot water for ten seconds — it helps more than you would expect.
3. The water itself
Coffee is 98% water. Water that is too hard tastes dull and scales the machine quickly; heavily filtered RO water strips the minerals that carry flavour and tastes flat. Our article on brewing water covers what to use.
4. Water left standing overnight
Water sitting in the tank for days picks up a stale smell that carries straight into the cup. Refill every morning and wash the tank weekly — the easiest item on this list and the one most often skipped.
5. It is time to descale
Scale slows the flow and drops the temperature. The signs are coffee dripping instead of pouring, a louder pump and a burnt bitterness. If it has been more than three months, follow our descaling steps.
6. Wrong button size

7. Capsules stored in the wrong place
Next to the stove, on top of the fridge or in afternoon sun, the aroma fades far faster than it should. Keep them cool, dry and out of light — see our storage guide.
