Thai iced coffee and oliang both need the same thing: enough strength to survive ice and condensed milk. Pull a normal long shot from a capsule coffee machine and the drink turns watery the moment the ice melts. That is the first thing this recipe fixes.
The one rule
Brew short and strong, then dilute with ice — never brew long and pour over ice. In practice: two capsules at espresso size, or one capsule at ristretto size for a smaller glass.
Thai iced coffee (16 oz glass)
- Two dark roast capsules at espresso size, about 80 ml total
- 2 tbsp condensed milk, stirred into the hot coffee first
- Glass filled with ice
- 60–80 ml fresh milk or non-dairy creamer poured over
Always dissolve the condensed milk in the hot coffee first. Poured straight onto ice it sinks and the drink tastes uneven.
Oliang (no milk)
- Two very dark capsules at espresso size
- 1.5–2 tbsp brown sugar or syrup, stirred while hot
- Ice to the top, plus about 60 ml cold water if you prefer it lighter
With no milk to soften it, strength matters even more — reach for a heavy-bodied roast like Premo Dark or Midnight Embers.

Three things that water it down
- Too long a pour — the number one cause. Use two short shots instead of one long one.
- Small ice cubes — they melt fast and dilute within minutes. Large cubes hold much better.
- Pouring boiling-hot coffee straight onto ice — it melts everything at once. Let the coffee cool for a minute first.
