Mocha is coffee plus chocolate, and it is easy to make from capsule coffee without buying expensive chocolate syrup. Ordinary cocoa powder works — you just need to dissolve it properly.
The one trick to learn first
Cocoa powder will not dissolve in cold liquid, and barely dissolves if you dump it into a full cup. The fix is to make a paste first: stir cocoa, sugar and a splash of hot water into a smooth, glossy mixture, then add coffee and milk.
Hot mocha (8 oz cup)
- 1.5 tsp cocoa powder + 2 tsp sugar + 2 tsp hot water — stir into a paste first
- One dark roast capsule at espresso size, poured over the paste and stirred
- 150 ml hot milk poured in
- A light dusting of cocoa on top
Iced mocha (16 oz glass)
- Same paste, but 3 tsp sugar — cold drinks read as less sweet
- Two capsules at espresso size, stirred into the paste
- Let it cool for a minute, then pour over a full glass of ice
- 100 ml fresh milk, stirred gently

Adjusting to taste
- More chocolate — go to 2 tsp cocoa but do not add more sugar, or sweetness buries the coffee
- More coffee forward — use two capsules and keep the cocoa the same
- Plant milk — oat milk suits cocoa best; almond milk comes out thinner
- No cocoa powder — finely chopped dark chocolate melted into the hot coffee works just as well
